To make this casserole, I started by dumping some lean ground beef into a large skillet over medium-high heat.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked, I drained the grease from the pan.

I added some crumbled bacon and diced tomatoes to the skillet.

I also added some frozen corn kernels to the skillet.

I stirred all of the ingredients together well.

Then I added some condensed cream of mushroom soup and BBQ sauce to the skillet.

I also added some salt, pepper, garlic powder and onion powder to the skillet.

I stirred all of the ingredients together until well combined.

Then I sprayed a 9 x 13 inch baking dish well with cooking spray.

 

I poured the ground beef mixture into the baking dish and spread it out evenly.

I sprinkled some shredded cheddar cheese on top.

Then I placed some frozen tater tots in a single layer on top.

I placed the dish in the oven and baked the casserole until the tater tots were golden brown on top.

Then I removed the dish from the oven.

I sprinkled some shredded cheddar on top.

Then I sprinkled some crumbled bacon on top.

I returned the dish to the oven and continued baking the casserole until the cheese on top was melted.

Ingredients You’ll Need to Make this Cowboy Casserole:

  • 1 lb lean ground beef
  • 8 slices bacon cooked, crumbled
  • 14 oz canned diced tomatoes
  • 2 cups frozen corn kernels
  • 10.5 oz condensed cream of mushroom soup
  • 1/2 cup BBQ sauce
  • 1/2 teaspoon salt

  • 3 cups shredded cheddar cheese

How to Make Cowboy Casserole:

  1. Preheat oven to 400F.

  3. Crumble the ground beef well as it cooks.
  4. Once the ground beef is fully cooked, drain the grease from the pan.
  5. Add about 2/3 of the crumbled bacon to the skillet.
  6. Add the diced tomatoes and frozen corn to the skillet and stir well.
  7. Add the cream of mushroom soup, BBQ sauce, salt, pepper, onion powder and garlic powder to the skillet.
  8. Stir all of the ingredients together well.
  9. Spray a 9 x 13 inch baking pan well with cooking spray.
  10. Pour the ground beef mixture into the baking dish and spread it out evenly.
  11. Sprinkle 2 cups of the shredded cheddar on top.
  12. Place the frozen tater tots in a single layer on top of the cheese.
  13. Place the dish in the oven and bake the casserole until the tater tots are golden brown on top. 30 – 35 minutes.
  14. Remove the dish from the oven and sprinkle the remaining shredded cheese and crumbled bacon on top.
  15. Return the dish to the oven and continue baking until the cheese on top is all melted. About 5 minutes.
  16. Remove the dish from the oven and allow the casserole to sit for a few minutes.
  17. Scoop, serve and enjoy!
