To make this cowboy casserole I started by chopping up eight slices of bacon.

I dumped the chopped bacon into a large skillet over medium-high heat.

I spread the bacon pieces out into a single layer.

I left the bacon to cook, stirring and flipping occasionally, until it was nicely browned and crispy.

Then I used a slotted spoon to transfer the cooked bacon to a plate lined with paper towel.

I added some lean ground beef to the skillet with the bacon grease.

I also added some diced onions to the pan.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked, I reduced the heat to medium and drained the grease from the pan.

Then I added a can of Bush’s Original baked beans to the skillet.

I also added some frozen corn kernels.

I stirred all of the ingredients together well.

Then I added some Sweet Baby Ray’s barbecue sauce to the skillet as well as some salt, pepper, onion powder and about 2/3 of the cooked bacon pieces.

I stirred well again.

I left the meat mixture to simmer while a I prepared the cornbread batter.

I dumped two boxes of Jiffy cornbread mix into a large mixing bowl.

I added eggs and milk to the bowl.

I stirred all of the ingredients together well.

Then I sprayed a 9 x 13 inch baking dish well with cooking spray.

I poured the meat mixture into the baking dish and spread it out evenly.

Then I poured the cornbread batter over the meat mixture and spread it out evenly.

I placed the dish in the oven and baked until the cornbread was golden brown on top.

Then I removed the dish from the oven and sprinkled some shredded cheese on top.

I sprinkled the remaining cooked bacon pieces on top.

I returned the dish to the oven and continued baking the casserole just until the cheese on top was fully melted.

I removed the dish from the oven and allowed the casserole to sit for five minutes.

Ingredients You’ll Need to Make This Cowboy Cornbread Casserole:

  1. Preheat oven to 400F.
  2. Add the chopped bacon to a large non stick skillet over medium-high heat.
  3. Spread the bacon pieces out into a single layer.
  4. Leave the bacon to cook, stirring and flipping occasionally, until it is nicely browned and crispy.
  5. Use a slotted spoon to transfer the cooked bacon pieces to a plate lined with paper towel.
  6. Add the ground beef and diced onions to the skillet with the bacon grease.
  7. Crumble the ground beef well as it cooks.
  8. Once the ground beef is fully cooked, reduce the heat to medium and drain the grease from the pan.
  9. Add the beans and corn to the skillet with the cooked ground beef and stir well.
  10. Add the BBQ sauce, salt, pepper, onion powder and 2/3 of the cooked bacon pieces to the skillet.
