To make this cowboy casserole, I started by heating some olive oil in a large skillet.

I added some lean ground beef to the skillet.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked, I drained the grease from the pan.

I dumped the cooked ground beef into the bottom of my 6 quart Crock Pot.

I poured some diced onions on top of the ground beef.

I sliced some red potatoes and dumped them on top of the ground beef and onions in the slow cooker.

Then I dumped some cream of mushroom soup, canned diced tomatoes and canned corn into the slow cooker.

I added some Sweet Baby Ray’s Hickory & Brown Sugar BBQ Sauce to pot.

I also added some salt, pepper, Italian seasoning, onion powder and garlic powder to the pot.

I stirred all of the ingredients together well.

Then I placed a lid on the Crock Pot and set it to slow cook on HIGH.

After 5 hours of cooking time, I removed the lid and stirred the contents.

Then I sprinkled some shredded cheddar cheese on top.

I returned the lid to the pot and left the casserole to continue cooking for an additional 30 minutes.

Ingredients You’ll Need to Make This Crock Pot Cowboy Casserole:

  • 1 tbsp olive oil
  • 1.5 lbs lean ground beef
  • 1 cup diced onions
  • 1.5 lbs red potatoes, thinly sliced
  • 10.5 oz cream of mushroom soup
  • 28 oz diced tomatoes
  • 15 oz canned corn, drained
  • 1/2 cup Sweet Baby Ray’s Hickory and Brown Sugar BBQ sauce (or your favourite bbq sauce)
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp Italian seasoning
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 1/2 cups shredded cheddar cheese

How to Make Crock Pot Cowboy Casserole:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground beef to the skillet.
  3. Crumble the ground beef well as it cooks.
  4. Once the ground beef is fully cooked, drain the grease from the pan.
  5. Dump the cooked ground beef into the bottom of your Crock Pot.
  6. Add the diced onions and sliced potatoes to the pot.
  7. Add the cream of mushroom soup, diced tomatoes and canned corn to the pot.
  8. Add the bbq sauce, salt, pepper, Italian seasoning, onion powder and garlic powder to the pot.
  9. Stir all of the ingredients together well.
  10. Place the lid on the Crock Pot and set it to cook on HIGH.
  11. After 5 hours of cooking time remove the lid and stir the contents well.
  12. Sprinkle the shredded cheese on top.
  13. Return the lid to the pot and continue cooking on HIGH for an additional 30 minutes to an hour.
