Step by Step Instructions for Making Hobo Casserole
STEP 1:
To make this casserole, I started by peeling and thinly slicing some potatoes.
STEP 2:
I dumped some lean ground beef into a large skillet over medium-high heat.
I crumbled the ground beef well as it cooked.
Once the ground beef was fully cooked, I added some diced onion, green bell peppers and minced garlic to the skillet.
I stirred well and continued cooking until the vegetables were softened and fragrant.
STEP 3:
I poured some cream of mushroom soup, sour cream, salt and pepper in to a mixing bowl.
Then I stirred the ingredients together until well combined.
STEP 4:
I placed the sliced potatoes in two layers in the bottom of a greased 9 x 13 inch baking dish.
I seasoned the potatoes with salt and pepper.
Then I spooned the ground beef mixture over the potatoes in the baking dish.
STEP 5:
I poured the sour cream and cream of mushroom mixture over the ground beef and spread it out evenly.
I sprinkled some shredded cheddar cheese on top.
STEP 6:
I covered the dish with foil.
Then I placed the casserole in the oven and baked it until the potatoes were tender.
I removed the foil from the dish and sprinkled some French’s crispy fried onions on top.
STEP 7:
I continued baking just until the onions on top were golden brown.
Then I removed the baking dish from the oven and allowed the casserole to rest for a few minutes.
I sprinkled some fresh chopped parsley on top.
Then the casserole was ready to slice and serve.

- 1 pound lean ground beef
- ½ cup yellow onion, diced
- 1 green bell pepper, diced

- 1 (10.75-ounce) can condensed cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- French fried onions (for topping)
- Optional toppings: sliced green onions, chopped fresh parsley
Instructions
- Preheat your oven to 375°F. Grease a 9x13-inch casserole dish and set aside.
- In a large skillet, cook the ground beef over medium heat until browned and cooked through, breaking it up as it cooks.
- Add the diced onion, green bell pepper, and minced garlic to the skillet with the ground beef.
- Sauté until the vegetables are softened and fragrant. It’s not required, but add a ¼-½ cup of water to the ground beef mixture if it seems dry.
- In a separate bowl, mix together the cream of mushroom soup and sour cream until well combined. Season with salt and pepper to taste.
- Layer the sliced potatoes in 2 even layers on the bottom of the dish. Add more salt and pepper to taste.
- Spoon the ground beef and vegetable mixture over the potatoes.
- Pour the cream of mushroom soup mixture over the beef and vegetables, spreading it out evenly.
- Sprinkle the shredded cheddar cheese over the casserole.
- Cover the casserole dish with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender when pierced with a fork.
- Remove the foil and sprinkle French fried onions on top of the casserole.
- Continue baking for an additional 5 minutes, or until the onions are golden brown and the casserole is heated through.
- Once done, remove the casserole from the oven and allow it to cool for a few minutes.
- Garnish with sliced green onions or chopped fresh parsley, if desired.
- Slice, serve and enjoy!
