This delicious Instant Pot ground beef recipe serves 4 people and takes just over 30 minutes from start to finish.

Instant Pot Cheesy Ground Beef and Rice is an easy dinner recipe perfect for weeknights. This Instant Pot rice dish is loaded with ground beef, corn, mozzarella and cheddar cheese.

 STEP 1: 

To make this cheesy ground beef and rice, I started by setting my Instant Pot to Saute Normal.

I added a dab of margarine to the pot.

Then I dumped in a pound of lean ground beef.

I cooked the ground beef until almost no pink remained.

 STEP 2: 

I added a can of condensed chicken broth, milk, salt, pepper, onion powder and garlic powder to the pot.

I stirred all of the ingredients together.

 STEP 3: 

Then I added some long grain white rice to the Instant Pot.

I gently pushed the rice around until it was covered by the liquid.

I did not stir after adding the rice.

 STEP 4: 

I added some condensed tomato soup and canned corn and did not stir.

 STEP 5: 

I placed the lid on the Instant Pot and turned the steam release handle to the sealing position.

Then I set the Instant Pot to Pressure Cook High for 7 minutes.

When the Instant Pot was finished cooking I immediately turned the steam release handle to the venting position and did a quick release.

I removed the lid and stirred well.

 STEP 6: 

Then I added some shredded mozzarella and cheddar cheese to the pot.

I stirred until the cheese was melted.

I allowed the ground beef and rice to sit for a few minutes and then scooped it on to serving plates.

Instructions

  1. Set Instant Pot to Saute Normal.
  2. Add a dab of butter or margarine to the pot and then add the ground beef.
  3. Cook the ground beef until almost no pink remains.
  4. Add the chicken broth, milk, salt, pepper, onion powder and garlic powder to the pot. Stir.
  5. Add the long grain rice and gently push it down until it is covered by the liquid.
  6. Add the tomato soup and corn. Do not stir.
  7. Place the lid on the Instant Pot and turn the steam release handle to the sealing position.
  8. Set the Instant Pot to Pressure Cook High for 7 minutes.
  9. When the Instant Pot is done cooking, immediately turn the steam release handle to the venting position and do a quick release.
  10. Remove the lid from the Instant Pot and stir.
  11. Add the shredded cheese and stir until the cheese is melted.
  12. Serve and enjoy!

I followed instructions but it burned instantly leaving me to finish cooking on saute :( but it was delicious!!

Made this last night and when I opened the lid I thought it was going to be soupy but after stirring and letting sit for a few minutes it was great, I am going to back off the onion and garlic by a 1/4 next time but that is personal taste.

Followed this recipe and my 1st attempt was AMAZING because it has SOOO much potential. It can be a side dish. We've mixed in our favorite salsa and had it on tortillas, I've added BBQ sauce after it was finished and had it on a burger bun. I've even added a large dollop of marinara sauce and had it with garlic bread. VERY versatile recipe you can eat every day, just "make it your own" so you don't feel like you're having the same thing all week. WONDERFUL recipe. Thank you!!

(I did use Almond Milk the 2nd time, to avoid the burnt milk on the bottom of the pot)

We’re currently going through this crazy Texas winter with no power and water. As soon as I had power I threw most of these ingredients, with a few substitutes, into my instant pot for a warm dinner. Came out great! Thank you for warming us up temporarily.

Good flavor. I added the milk at the end and simmered out though. Milk in quick cookers isn't always the best (any dairy).
