To make this Mexican corn casserole, I started by dumping some frozen corn kernels into a large mixing bowl.

I added some mayo and sour cream to the bowl.

I also added some chili powder, garlic powder and salt to the bowl.

I added some grated parmesan cheese to the bowl.

Then I stirred all of the ingredients together well.

I sprayed a 9 x 9 inch baking dish well with cooking spray.

Then I dumped the corn mixture into the dish and spread it out evenly.

I sprinkled some additional chili powder on top.

Then I placed the baking dish in the oven and baked the casserole until it was bubbling and hot through to the center.

I removed the dish from the oven.

I sprinkled some grated parmesan cheese and chopped green onions on top.

  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1 tsp chili powder
  • 1 tsp garlic powder

  • 1 tbsp grated parmesan

  1. Preheat oven to 350F.
  2. Pour the frozen corn into a large mixing bowl.
  3. Add the mayo, sour cream, chili powder, garlic powder, salt and grated parmesan to the bowl.
  4. Stir all of the ingredients together well.
  5. Spray a 9 x 9 inch baking dish well with cooking spray.
  6. Dump the corn mixture into the baking dish and spread it out evenly.
  7. Sprinkle the 1/4 tsp of chili powder on top.
  8. Place the baking dish in the oven and bake the casserole until it bubbling and hot through to the center. 40-45 minutes.
