To make this corn dip, I started by dropping some butter into a cast iron skillet over medium heat.

As the butter was melting I added some garlic puree to the skillet.

I stirred the butter and garlic together well.

Then I added some diced red onions to the skillet.

I left the red onions to cook for a few minutes, stirring occasionally.

Then I added some drained canned corn to the skillet.

I stirred well.

Then I added some chili powder to the skillet.

I stirred well again.

I left the corn mixture to cook, stirring occasionally, for five minutes.

After five minutes, I added a brick of cream cheese to the skillet.

I stirred until the cream cheese was completely melted.

Then I removed the skillet from the heat.

I added some sour cream and lime juice to the skillet.

I stirred well.

Then I added some crumbled feta and shredded Mexican cheese blend.

I stirred just until the cheese was melted.

Then I sprinkled some more shredded cheese on top.

I also sprinkled some chili powder on top.

I placed the skillet in the oven under the broiler for a couple minutes.

I removed the skillet from the oven once the cheese on top was bubbling.

Ingredients You’ll Need to Make This Mexican Street Corn Dip:

  • 1 tbsp butter

  • 1 tbsp chili powder
  • 8 oz cream cheese

How to Make Mexican Street Corn Dip:

  1. Place an oven safe skillet on a burner over medium heat.
  2. Set the oven to broil on HIGH.
  3. Add the butter to skillet.
  4. As the butter is melting and the garlic puree to the skillet and stir well.
  5. Add the red onions to the skillet and stir well.
  6. Continue cooking the onions for a couple minutes.
  7. Add the corn to the skillet and stir well.
  8. Add the chili powder to the skillet and stir well.
  9. Continue cooking the corn for 5 minutes, stirring occasionally.
  10. Add the cream cheese to the skillet and stir until it’s completely melted.
  11. Remove the skillet from the heat and add the sour cream and lime juice to the skillet and stir well.
  12. Add the feta and shredded cheese to the skillet and stir until the cheese is melted.
  13. Sprinkle the 1/3 cup of shredded cheese on top.
  14. Sprinkle the 1/2 tsp of chili powder on top.
  15. Place the skillet under the broiler until the cheese on top is bubbling. 2 – 3 minutes.
  16. Remove the dish from the oven.
  17. Sprinkle the chopped green onions and feta on top.
  18. Serve and enjoy!
