Broccoli Casserole

Blanch the broccoli in boiling water for 3 minutes, drain, and set aside.

In a bowl add the mayonnaise, sour cream, 2 beaten eggs, shallot, cheese, salt, and pepper.

Mix to combine all the ingredients.

Place the Ritz crackers in a plastic bag, and with a heavy object, crush the crackers.

Place the broccoli in the bottom of the baking dish.

Top with the mayonnaise and sour cream mixture. Stir a little to cover all the broccoli florets.

Cover with crushed crackers.

Place in the oven and cook for 30 minutes.
