Easy Chicken Pot Pie

Cook diced onion in melted butter in a large skillet. Add some flour, salt and pepper. Stir and cook until mixture thickens.

Add chicken broth and half & half. Stir well and simmer.

Add frozen mixed veggies to the skillet. Stir well and cook for about 5 minutes.

Add shredded chicken and stir well.

Scoop the mixture into 7 oz ramekins and place them on a baking sheet.

Unroll Pillsbury pie crust and use leaf shaped cookie cutters to cut out pieces of pastry.

Lay the pieces of pie crust on top of the chicken mixture in the ramekins.

Bake until filling is bubbling and crusts are golden.
