Beef Enchilada Casserole

Cook some ground beef in a large skillet.

Add some diced onion, green peppers and minced garlic to the skillet and stir well.

Add some corn, black beans, enchilada sauce, chili powder, coriander, cumin, salt, and pepper to the skillet and stir well.

Spread half of the beef mixture in the bottom of a baking dish.

Sprinkle some chopped corn tortilla pieces on top.

Sprinkle shredded cheese on top.

Repeat the layers starting with the remaining ground beef, followed by more corn tortilla pieces and cheese.

Cover with foil and bake for 30 minutes.

Garnish with your favourite toppings. Serve and enjoy!
