Cajun Chicken Orzo

Cut some boneless skinless chicken breasts into 1 inch chunks and place them in a bowl. Add some Cajun seasoning to the bowl and toss to coat.

Heat some oil in a skillet and add the chicken breast chunks to the skillet.

Once the chicken breast chunks are nicely browned all over, add some minced shallot and garlic puree to the skillet. Stir well.

Add some frozen corn and Rotel to the skillet and stir again.

Add some orzo to the skillet. Stir well and cook for a few minutes.

Add the chicken broth to the skillet and bring to a simmer. Simmer until all of the liquid is absorbed.

Add some heavy cream and stir well.

Remove the skillet from the heat and add some shredded cheese.

Stir until the cheese is melted.
