Cajun Mac and Cheese

Cook macaroni according to the directions on the package. Drain and set aside.

Cook some chopped bacon in a large skillet until browned and crispy.

Use a slotted spoon to transfer the cooked bacon to a paper towel lined plate.

Add some diced sweet potatoes, diced red peppers and diced onions to the skillet with the bacon grease and stir well.

Cook the diced veggies for 5 minutes, stirring occasionally. Then add some canned corn to the skillet and stir well.

Add some Cajun seasoning and salt to the skillet and stir until all of the veggies are coated in the seasoning.

Add some flour to the skillet and stir well. Continue cooking for 3 minutes.

Add some chicken broth to the skillet and stir until it thickens.

Add the heavy cream to the skillet and stir well. Bring the liquid to a boil. Simmer for 4 minutes.

Add the cooked macaroni to the skillet and stir until all of the noodles are coated in sauce.

Add the chopped chives and cooked bacon to the skillet and stir well.

Remove the skillet from the heat and add some shredded cheese. Stir just until the cheese is melted.
