Chicken Fajita Casserole

In a large saucepan add olive oil, once hot add sliced bell peppers, onion, fajitas seasoning mix, salt, and pepper. Cook until the veggies are softened.

Place shredded chicken the bottom of a casserole dish.

Spoon salsa over the chicken in the baking dish.

Cover with the cooked bell peppers and onions.

Sprinkle shredded cheese on top.

Place in the oven and cook for 20 minutes. Remove from oven and top with chopped cilantro.

Serve with cooked rice if desired.
