Cowboy Cornbread Casserole

Cook some chopped bacon pieces in a large skillet.

Use a slotted spoon to transfer the cooked bacon to a paper towel lined plate.

Add some lean ground beef and diced onions to the skillet with the bacon grease. Crumble the ground beef well as it cooks.

Once the ground beef is fully cooked, drain the grease from the pan.

Add some baked beans and frozen corn kernels to the skillet and stir well.

Add some BBQ sauce, salt, pepper, onion powder and 2/3 of the cooked bacon pieces to the skillet.

Stir all of the ingredients together well and leave the mixture to simmer.

Dump some Jiffy cornbread mix, eggs and milk into a mixing bowl.

Stir the ingredients together well.

Pour the ground beef mixture into a 9 x 13 inch baking dish and spread it out evenly.

Spread the cornbread batter over the ground beef mixture. Bake for 16-18 minutes.

Sprinkle some shredded cheese and the remaining cooked bacon on top of the cornbread and continue baking.

Leave the casserole to rest for about 5 minutes.
