Cranberry Orange Shortbread Cookies

In a stand mixing bowl combine butter and confectioners sugar and beat on medium speed until the mixture turns light and fluffy for 3-5 minutes.

Add vanilla extract and salt and beat further for a minute.

Add flour in batches and mix on low speed until just combined.

Fold in the chopped cranberries and orange zest using a spatula.

Divide the cookie dough into two equal portions. Shape each portion into a log. Refrigerate for at least an hour.

Cut the cookie dough logs into slices approximately 1/3 of an inch thick.

Place the slices on a parchment lined baking sheet.

Bake the cookies until the edges are just slightly golden. Allow the cookies to cool on the pan 30 minutes and then transfer them to a wire rack.
