Creamy Burrito Casserole

Brown some ground beef in a skillet and add diced onions and minced garlic.

Add refried beans, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet. Stir well and cook for 5 minutes.

In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux. Cook for 1-2 minutes, stirring constantly until the mixture is lightly golden.

Whisk in milk and then add salsa and sour cream.

Stir well and season with salt and pepper.

Place flour tortillas in the bottom of a baking dish and spread the sauce on top.

Spread half of the ground beef mixture on top. Sprinkle with cheddar cheese.

Repeat with another layer of tortillas, sauce, ground beef and cheese.

Finish with another layer of tortillas, sauce and cheese.

Bake for 25 minutes covered with foil and then remove foil to brown cheese.
