Crispy Sour Cream and Onion Chicken

Dump some sour cream, onion powder, salt and pepper into a large mixing bowl.

Stir all of the ingredients together well. Add some chopped chives to the bowl and stir again.

Scoop 1/3 of the sour cream mixture into the bottom of a 9 x 13 inch baking dish and spread it out to cover the bottom.

Place some boneless, skinless chicken breasts on top of the sour cream mixture in the baking dish.

Pour the remaining sour cream mixture on top of the chicken breasts making sure to cover them completely.

Place the dish in the oven and bake the chicken breasts for 40 minutes, or until they are cooked through.

While the chicken breasts are cooking, pour the fried onions into a large Ziploc bag and crush them with a rolling pin.

Once the chicken is cooked, remove the dish from the oven and pour the crushed fried onions on top.

Return the dish to the oven for 5 minutes just to brown the onions slightly. Then sprinkle with chopped chives.
