Crock Pot Meatloaf

Pour ketchup and barbecue sauce into a medium mixing bowl. Stir well and set aside.

Dump ground beef, crushed Ritz crackers, Lipton onion soup mix, eggs, salt and pepper into a large mixing bowl.

Add 1/2 cup of the prepared sauce mixture to the bowl.

Use your hands to combine all of the ingredients well.

Line your crock pot with aluminum foil and spray the foil with cooking spray.

Scoop the meat mixture into the foil lined crock pot and use your hands to form it into a loaf shape.

Spoon the remaining ketchup and barbecue sauce mixture onto the meatloaf and spread it out to cover the whole thing.

Place the lid on the crock pot and cook the meatloaf on HIGH until it reaches an internal temperature of 160F. About 3 hours.

Use the foil to lift the meatloaf from the pot and place it on a baking sheet. Spread sauce on top again and place under broiler until the glaze is bubbling.

Allow the meatloaf to rest for a few minutes and then slice.
