Hobo Casserole

Brown some ground beef in a skillet. Add diced onion, green bell peppers and minced garlic.

Dump cream of mushroom soup, sour cream, salt and pepper into a bowl. Stir well.

Place sliced potatoes in the bottom of a greased 9 x 13 inch baking dish.

Spoon the ground beef mixture over the potatoes.

Pour the soup and sour cream mixture over the ground beef and spread it out evenly.

Sprinkle shredded cheddar cheese on top.

Cover the dish with foil and bake until the potatoes are fork tender.

Remove the foil and sprinkle with French's fried onions. Bake for an additional 5 minutes.

Sprinkle with fresh chopped parsley. Serve and enjoy!
