Lemon Shortbread Cookies

Dump softened butter and powdered sugar into a mixing bowl.

Cream the butter and sugar together with an electric mixer.

Add flour and cornstarch to the bowl.

Continue mixing with the electric mixer until fully combined.

Add lemon zest and lemon juice to the bowl and continue mixing.

Use a 1 tablespoon scoop to scoop the dough and roll it into balls. Place the cookie dough balls on a parchment lined baking sheet.

Use a fork to gently flatten the cookie dough balls.

Bake the cookies until they are just starting to brown slightly around the bottom edges.

Allow the cookies to cool. Serve and enjoy!
