Loaded Baked Potato Soup

Cook bacon pieces in a large pot until brown and crispy. Use a slotted spoon to remove the bacon from the pot.

Add onion, celery, and carrots to the pot. Sauté the veggies until tender.

Add potatoes, chicken broth, salt, pepper, chicken base, garlic powder, and dried parsley. Stir to combine.

Bring to a boil. Reduce heat, cover, leaving some room for steam to escape, and simmer until potatoes are fork-tender.

Turn off the heat. Mash some of the potatoes with a potato masher, if desired.

Add cheese and stir until melted.

Add cooked bacon pieces and stir.

Add half and half and stir.

Ladle into bowls.

Garnish with sour cream, bacon, shredded cheese and chopped green onions.
