Loaded Cauliflower Soup

Cook bacon pieces in a pot until crispy. Use a slotted spoon to remove the cooked bacon from the pot.

Add diced onions to the pot and cook until they are translucent.

Add minced garlic to the pot and continue cooking for one minute.

Add 1 cup of chicken broth to the pot and use it to deglaze the pot.

Add cauliflower florets to the pot and pour in the remaining 3 cups of chicken broth.

Add the salt, pepper and onion powder to the pot. Stir well and bring the liquid to a boil.

Simmer until cauliflower is tender. Then blend with immersion blender until smooth.

Add cream cheese and heavy cream to the pot with the soup. Stir until the cream cheese is melted.

Add cooked bacon pieces and chopped green onions to the pot and stir well.

Add shredded cheddar to the pot and stir until cheese is melted.

Ladle the soup into bowls and top with bacon, green onions and cheddar cheese.
