How to Make Mexican Cornbread Casserole

Brown 1 pound of lean ground beef in a large skillet.

Add a can of creamed corn, corn kernels and Rotel to the skillet.

Add taco seasoning, salt, pepper and onion powder to the skillet.

Stir well and simmer for 5 minutes.

Add shredded Mexican cheese blend and stir until melted.

Spread the mixture in a 9 x 13 inch baking dish.

Dump 2 boxes of Jiffy cornbread mix into a bowl with milk and eggs.

Stir all of the ingredients together well.

Pour the cornbread batter over the ground beef mixture.

Bake until the cornbread starts to brown on top.

Sprinkle with shredded cheese.
