One Pan Cheesy Taco Chicken and Rice

Add sliced chicken thighs and diced onions to a hot skillet.

Cook until the chicken slices are browned and the onions are softened.

Add taco seasoning and minced garlic to the skillet.

Stir until all of the chicken is coated in the seasoning.

Add chicken broth, Rotel, canned corn, black beans and tomato paste to the skillet.

Stir well and bring the mixture to a boil.

Add some uncooked white rice. Stir well , cover the skillet and leave to simmer.

After 15 minutes remove the lid and stir well.

Sprinkle shredded cheese on top.

Continue cooking until the cheese is melted. Sprinkle chopped cilantro on top.
