Philly Cheese Steak Soup

Melt butter in a large pot. Add diced green peppers, onions and sliced mushrooms.

Stir well and cook until the onions are translucent.

Add chopped roast beef and minced garlic to the pot and stir well.

Add all purpose flour to the pot. Stir well and continue cooking for a few minutes.

Slowly stir in beef broth while stirring continuously.

Add half and half, Worcestershire sauce, salt and pepper to the pot. Stir well.

Bring the soup to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, for 10 minutes.

Add a cornstarch slurry to the soup and stir well while it thickens.

Remove the pot from the heat and add shredded provolone cheese. Stir until the cheese is melted.

Garnish with chopped parsley and additional shredded provolone.
