Pizza Meatloaf

Line a 9 x 5 inch loaf pan with aluminum foil and spray it well with cooking spray.

Dump some ground beef, bread crumbs and eggs into a large mixing bowl.

Use your hands to mix the ingredients until fully combined.

Scoop two thirds of the meat mixture into the foil lined loaf pan. Press the mixture into the bottom and up the sides of the loaf pan to form a hollow in the center.

Pour some pizza sauce into the hollow and spread it out evenly.

Sprinkle some shredded mozzarella on top of the pizza sauce. Place some pepperoni slices on top of the cheese.

Sprinkle some diced green peppers and red onions on top of the pepperoni.

Place the remaining meat mixture on top and press it out to seal the meatloaf. Pour some pizza sauce on top and spread it out evenly.

Bake the meatloaf for 50 minutes and then remove it from the oven.

Sprinkle some shredded cheese on top and place some pepperoni slices on top of the cheese.

Sprinkle some diced green peppers and red onions on top.

Return the loaf pan to the oven and continue baking until the cheese is fully melted.

Remove the pan from the oven and allow the meatloaf to rest. After 5 minutes use the foil to lift the meatloaf from the pan.

Slice, serve and enjoy!
