Porcupine Meatballs

Pour ground beef, Minute rice, egg, diced onion, salt, pepper and garlic powder into a mixing bowl.

Mix all of the ingredients together until well combined.

Scoop the meat mixture 2 tablespoons at a time and form into balls. Set the meatballs aside on a plate.

Pour condensed tomato soup, water, Worcestershire sauce and Italian seasoning into a mixing bowl. Whisk well and set  aside.

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs to the skillet.

Brown the meatballs on all sides and then drain the grease from the skillet.

Bring the sauce to a simmer. Cover the skillet and reduce the heat to low. Leave the meatballs to simmer for 45 minutes.

Remove the skillet from the heat top with fresh chopped parsley if desired.
