Sausage and Pancake Breakfast Casserole

Cook pork breakfast sausage meat and diced onions in a skillet.

When the sausage is fully cooked, add some frozen diced hash brown potatoes to the skillet.

Add some salt, pepper and onion powder to the skillet. Stir well and cook for a few minutes.

Dump the mixture into a greased 9 x 13 inch pan and spread it out evenly.

Dump some pancake mix, water and maple extract into a medium mixing bowl.

Whisk until no large lumps remain.

Pour the pancake mixture over the sausage and potato mixture in the baking dish.

Bake until the casserole is golden brown across the top.
