Shepherd's Pie with Cornbread

Cook some ground beef in a large skillet.

Add some diced red and green bell peppers to the skillet.

Add some frozen corn to the skillet and stir well.

Add salt, pepper, onion powder and garlic powder to the skillet. Stir well.

Add water and milk to the skillet and bring to a boil.

Add instant mashed potatoes to the skillet and stir well.

Remove the skillet from the heat and add chopped green onions. Stir well.

Pour the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.

Pour Jiffy mix, milk and eggs into a mixing bowl. Stir the ingredients together until no lumps remain.

Pour the cornbread batter over the mixture in the baking dish and use a spatula to spread it out evenly.

Bake until the cornbread is nicely browned all across the top.

Let the casserole rest for about 10 minutes to firm up. Then serve and enjoy!
