Stuffed Pepper Casserole

In a large pan or skillet, brown the ground beef over medium heat, breaking it up as it cooks.

Add the chopped onion and minced garlic; cook until the onion is tender.

Add the chopped bell peppers, diced tomatoes, tomato sauce, cooked rice, dried basil, dried oregano, paprika, salt, and pepper to the skillet. Stir to combine.

Spoon the mixture into a 9x13-inch casserole dish and spread evenly.

Sprinkle shredded mozzarella cheese on top.

Cover with foil and bake.

Remove foil for final 5 - 10 minutes of baking to brown the cheese slightly.

Sprinkle chopped parsley on top and scoop.
