Taco Meatloaf

Dump 2 pounds of lean ground beef into a large bowl with some crushed corn chips and eggs.

Add some salsa, taco seasoning, salt, pepper and garlic powder to the bowl.

Use your hands to combine the ingredients well.

Add some shredded cheese to the bowl and then combine it with the meat mixture.

Press the meat mixture into a foil lined loaf pan.

Spread some salsa on top of the meat mixture.

Bake for 40 minutes and then sprinkle some shredded cheese on top.

Continue baking until the meatloaf reaches an internal temperature of 160F.
