Taco Pie

Bake a 9 inch deep dish pie crust according to the directions on the package.

Brown some lean ground beef in a large skillet.

Add some diced green peppers to the skillet and stir.

Add some taco seasoning and Rotel to the skillet.

Stir well and continue cooking until no liquid remains in the bottom of the skillet.

Scoop the ground beef mixture into the baked pie crust.

Crack two eggs into a small bowl and beat well with a fork.

Pour the eggs over the ground beef mixture in the pie crust and stir the mixture up slightly.

Sprinkle some shredded cheese on top.

Place the pie in the oven and bake until the cheese is completely melted and starting to brown.

Sprinkle some shredded lettuce and diced tomatoes on top right before serving.
