Twice Baked Potatoes

Brush potatoes with the vegetable oil and place them on a parchment lined baking sheet. Bake for an hour.

Slice the potatoes in half lengthwise.

Scoop the flesh from the potatoes leaving a thin layer to help the potato skins hold their shape.

Dump the cooked potato flesh into a large mixing bowl and place the potato skins on the parchment lined baking sheet.

Add some softened butter, sour cream, milk, salt, pepper, garlic powder and onion powder to the bowl with the potato flesh.

Use a potato masher to mash the potatoes and combine all of the ingredients.

Add some crumbled bacon and shredded cheese to the bowl.

Stir well.

Scoop the mixture into the potato skins.

Sprinkle shredded cheese, crumbled bacon and chopped green onions on top.

Bake until the cheese is completely melted and just starting to brown.
