Mexican Ground Beef Casserole

Cook ground beef in a skillet until it is browned and crumbled. Drain the grease.

Add minced garlic and diced red onions to the skillet. Stir well and cook until onions are translucent.

Stir in some taco seasoning.

Add diced tomatoes, black beans, corn and tomato sauce to the skillet. Stir well and simmer.

Place corn tortillas in the bottom of a baking dish.

Spread half of the ground beef mixture over the corn tortillas. Sprinkle shredded cheddar cheese on top.

Spread half of the ground beef mixture over the corn tortillas. Sprinkle shredded cheddar cheese on top.

Repeat with another layer of corn tortillas, the remaining beef mixture and shredded cheddar cheese.

Bake the casserole for thirty minutes.
