Sausage and Peppers Meatloaf

Dump some diced green peppers, red peppers and onions into a large skillet over medium-high heat.

Once the onions are starting to brown, add some marinara and sweet Thai chili sauce to the pan.

Stir well and reduce heat to low.

Remove some mild Italian sausage meat from the sausage casings and dump it into a large mixing bowl.

Add some Ritz cracker crumbs and eggs to the bowl.

Use your hands to mix the ingredients well. Add 1 cup of the marinara and peppers mixture to the bowl.

Stir until the marinara and peppers are fully combined with the sausage mixture.

Scoop the sausage mixture into a foil lined loaf pan and press it in well.

Pour the remaining marinara and peppers mixture on top of the meat and spread it out evenly.

Place the loaf pan in the oven and bake the meatloaf until a meat thermometer inserted into the center reads 160F.

Let the meatloaf rest in the pan for 5 minutes before using the foil to lift it out.
