Vegetable Barley Soup

In a large pot over medium-high heat, add some olive oil; once hot, add the leek and garlic, and cook for 5 minutes until the leek has softened.

Add some diced carrots, diced tomatoes, canned white beans, pearled barley, dried oregano, salt, pepper and vegetable broth to the pot.

Stir well and then simmer.

After 25 minutes add some chopped kale and frozen peas to the pot.

Stir well and cook for another minute.
