Fiesta Chicken Casserole

Saute onions and bell peppers in a large skillet.

Add black beans, corn, Rotel, chili powder, cumin, garlic powder, and salt to the skillet.

Stir well to combine all of the ingredients.

Add pre cooked chopped chicken to the skillet. Stir well.

Pour uncooked white rice into a greased 9 x 13 inch baking dish.

Pour the chicken and veggie mixture over the rice. Pour chicken broth over everything.

Cover the dish with foil and bake 20 minutes. Remove foil, stir well and continue baking  until rice is tender.

Sprinkle shredded cheese on top.

Bake until cheese is fully melted.
