How should I store Fiesta Chicken Casserole?

Any leftovers can be stored in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze for up to 3 months. Reheat thoroughly before serving.

What substitutions could I make?

  1. Chicken: You can substitute chicken with other proteins such as cooked ground beef, turkey, or even vegetarian options like tofu or plant-based meat alternatives.
  2. Vegetables: Feel free to modify the vegetable selection based on your preference or what you have on hand. You can use diced zucchini, mushrooms, spinach, or any other vegetables you enjoy.
  3. Cheese: Modify the cheese based on your preference or dietary restrictions. If you’re looking for a healthier option, you can use reduced-fat cheese, or for a dairy-free version, consider using dairy-free cheese alternatives made from soy, almond, or cashews.

Remember that substitutions may alter the overall taste and texture of the casserole, so it’s a good idea to taste and adjust the seasonings as needed. Be creative and have fun customizing the Fiesta Chicken Casserole to your liking.

What should I serve with Fiesta Chicken Casserole?

Fiesta Chicken Casserole pairs well with a variety of side dishes that complement its flavors and textures. Here are some suggestions:

  1. Tortillas: Warm up some tortillas, such as corn or flour tortillas, and serve them on the side. You can use them to wrap the casserole, creating delicious tacos or burritos.
  2. Guacamole and Salsa: Prepare fresh guacamole and salsa as condiments. These fresh and tangy toppings will add a burst of flavor to the casserole. Serve them alongside tortilla chips for dipping.
  3. Salad: Pair the casserole with a crisp and refreshing salad. A simple mixed green salad with a tangy dressing, like a lime-cilantro vinaigrette, complements the richness of the casserole.
  4. Roasted Vegetables: Roast a medley of vegetables such as bell peppers, zucchini, and onions with a sprinkle of Mexican spices. The roasted vegetables add a vibrant and healthy element to the meal.

These are just a few suggestions, but feel free to get creative and serve Fiesta Chicken Casserole with your favorite sides to create a well-rounded and satisfying meal.

Notes

  • Use can use shredded chicken in place of the cubed. A rotisserie chicken
from the grocery store is great for this!
  • You can use cooked rice in this casserole if you don’t want to have a long
    cooking time in the oven.
  • Feel free to use another type of cheese such as Cheddar in place of the Colby
    jack.
  • The recipe is written to prevent the rice from drying out in the oven, which is
common. Having the rice on the bottom at the beginning, allows the rice to
absorb the chicken mixture and broth. After stirring, it will continue to absorb
the flavor and cook up fluffy and not dry.
