STEP 1:
To make this chicken and rice casserole, I started by chopping some cooked chicken into bite sized pieces.
I poured some diced onions and diced bell peppers into a large skillet.
I cooked the onions and peppers until tender.

I added some black beans, corn, Rotel, chili powder, cumin, garlic powder and salt to the skillet.
I stirred all of the ingredients together well.

Then I added the chicken to the skillet.

I poured some uncooked long grain white rice into a greased 9 x 13 inch baking dish and spread it out evenly.
Then I poured the chicken and vegetable mixture evenly over the rice in the baking dish.

I poured some chicken broth over the ingredients in the baking dish.
STEP 6:
I covered the dish with foil and then baked the casserole for twenty minutes.
After twenty minutes I removed the dish from the oven and stirred the ingredients well.
I returned the foil to the dish and returned it to the oven to continue baking until the rice was tender and the liquid was absorbed.
I removed the dish from the oven.
I sprinkled shredded cheddar cheese on top.

Then I returned the dish to the oven uncovered and continued baking until the cheese was melted.
I removed the dish from the oven and allowed the casserole to rest for a few minutes.

- Use can use shredded chicken in place of the cubed. A rotisserie chicken
from the grocery store is great for this! - You can use cooked rice in this casserole if you don’t want to have a long
cooking time in the oven. - Feel free to use another type of cheese such as Cheddar in place of the Colby
jack. - The recipe is written to prevent the rice from drying out in the oven, which is
common. Having the rice on the bottom at the beginning, allows the rice to
absorb the chicken mixture and broth. After stirring, it will continue to absorb
the flavor and cook up fluffy and not dry.
