 STEP 1: 

I poured flour, brown sugar, baking powder, baking soda, and salt into a mixing bowl.

I whisked the ingredients together and set the bowl aside.

 STEP 2: 

In a separate bowl, I beat together eggs and softened butter.

I also added lemon zest and vanilla to the bowl.

I folded the dry ingredients into the butter mixture and also mixed in some greek yogurt.

I greased and floured my bundt pan to prevent sticking.

I poured the batter into the buntd pan and baked the cake until a toothpick inserted in the center came up clean.

I allowed the cake to cool in the pan for about 15 minutes before removing it.

 STEP 7: 

I combined some powdered sugar and water to form a glaze and poured it over the cooled cake.

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 1 cup Greek yogurt
  • 1 cup fresh blueberries (you can toss them in a little flour to prevent sinking)

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons water

Instructions

    1. Preheat your oven to 350°F. Grease and flour a bundt pan to prevent sticking.
    2. In a medium bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt. Set aside.
    3. In a large bowl, using an electric mixer, beat the softened butter together until light and fluffy (about 2-3 minutes).
    4. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract and lemon zest.
    5. Gradually add the dry ingredients to the butter mixture, alternating with the Greek yogurt. Start and end with the flour mixture. Mix just until combined.
    6. Gently fold in the blueberries that have been previously tossed in flour.
    7. Pour the batter into the prepared bundt pan, smoothing the top with a spatula.
    8. Bake for 50-60 minutes, or until a toothpick inserted into the cake comes out clean.
