Ingredients
- 3-4 tablespoon olive oil
- 1 lb ground beef
- ½ small onion, finely chopped
- 4 oz can diced green chiles
- 1 oz packet taco seasoning
- 20 corn tortillas
- 16 oz can refried beans
- 8 oz sharp cheddar cheese, shredded
Optional toppings
- cilantro, sour cream, salsa, avocados, tomatoes etc
Instructions
- Preheat the oven to 425 degrees. Line 2 large baking sheets with parchment paper and grease them each with 1 tablespoon of olive oil.
- Finely dice the onion.
- In a medium bowl, add the ground beef, diced onion, green chiles and taco seasoning. Use your hands (i wear food safe gloves) to combine the mixture.
- Get about 4-5 paper towels really damp and working with 2-3 tortillas at a time, wrap them in the damp paper towels and heat in the microwave for 30 seconds until steamy and warm. (This makes them more pliable and less likely to crack).
- Spread a spoonful of meat into one side of each tortilla, the a smaller spoonful of beans onto the other side. Sprinkle cheese.
- Gently fold each tortilla in half, arrange on the baking sheet and brush the tops and side with olive oil.
- Bake for 12-15 minutes. You can flip halfway through if you’d like too.
- Serve warm with your favorite toppings and enjoy!
