  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 cup diced onion
  • 1 cup chopped celery
  • 1 tablespoon chopped garlic
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon Italian seasoning
  • 28 oz can diced tomatoes
  • 24 oz can tomato sauce
  • 3 cups frozen mixed vegetables
  • 4 cups beef broth
  • 2 cups diced russet potatoes

Instructions

  1. Heat the oil in a large pot over medium-high heat.
  2. Add the ground beef to the pot and break it apart.
  3. Add the diced onions and diced celery to the pot and continue cooking the until the ground beef is fully browned and the veggies are softened.
  4. Drain any excess grease from the pot.
  5. Add the garlic, salt, pepper and Italian seasoning to the pot. Stir well and continue cooking for a few minutes.
  6. Add the diced tomatoes, tomato sauce and frozen mixed vegetables to the pot and stir well.
  7. Add the beef broth and stir well again.
  8. Bring to a low boil and then leave the soup to simmer for 15 minutes.
  9. After 15 minutes add the diced potatoes and stir well.
  10. Continue simmering until the potatoes are fork tender. About 15 minutes.
  11. Serve and enjoy!
