  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 3 lbs frozen pierogies ( I used bacon flavoured )
  • 3 cups shredded mozzarella cheese
  • 5 strips cooked bacon, chopped
  • chopped parsley for garnish

 Step by Step Instructions

 STEP 1: 

I started by dropping some shredded rotisserie chicken into a mixing bowl.

I added two jars of alfredo sauce to the bowl.

I added some chopped garlic and Italian seasoning to the bowl.

Then I stirred all of the ingredients together until well combined.

I sprayed a 9 x 13 inch baking dish well with cooking spray.

I baked the casserole, covered for 30 minutes.

After 30 minutes I removed the foil.

I left the casserole to continue baking, uncovered, for 25 minutes.

Then I removed the dish from the oven and allowed it to rest for a few minutes.

I sprinkled fresh chopped parsley on top just before serving.

  5. Spoon approximately two thirds of the chicken mixture over the pierogies.
  6. Sprinkle 2 cups of shredded mozzarella over the chicken mixture.
  7. Place the remaining pierogies on top of the cheese.
  8. Spoon the remainder of the chicken mixture over the pierogies.
  9. Sprinkle the remaining cup of shredded mozzarella over the chicken.
  10. Sprinkle the chopped bacon pieces over the cheese.
  11. Cover the dish with aluminum foil.
  12. Place the dish in the oven and bake the casserole, covered, for 30 minutes.
  13. After 30 minutes remove the foil and continue baking, uncovered, for 20 -25 minutes until the cheese is fully melted and the bacon is crispy.
  14. Remove the dish from the oven and allow it to rest for a few minutes.
  15. Sprinkle chopped parsley on top if desired.
