  • 1 cup diced yellow onion
  • 1 tablespoon chopped garlic
  • 10 oz Rotel diced tomatoes
  • 1 oz taco seasoning
  • 2 – 10×10-inch sheets of puff pastry
  • 1 cup shredded nacho cheese

 Step by Step Instructions

 STEP 1: 

I dropped lean ground beef into a large skillet over medium-high heat.

I broke up the ground beef.

I added some diced onions to the skillet.

I stirred well and continued cooking until the ground beef was fully browned.

I added a can of Rotel diced tomatoes and a packet of taco seasoning to the skillet.

I stirred well and continued cooking until all of the ground beef was coated in seasoning and no liquid remained in the skillet.

I removed the skillet from the heat and set it aside.

 STEP 5: 

I unrolled two sheets of store bought puff pastry dough onto a silicone mat.

I made the dough into a 20 x 13 inch rectangle by cutting and moving some dough to the long side and then rolling it out with a rolling pin.

 STEP 6: 

I sprayed a 6 cup jumbo muffin tin well with cooking spray.

I carefully laid the rectangle of puff pastry dough over the muffin tin and gently arranged the dough to fill in all the cups.

 STEP 7: 

I spooned the ground beef mixture into the pastry filled muffin cups.

I sprinkled shredded nacho cheese over the ground beef.

 STEP 8: 

I placed the muffin tin in the oven and baked the taco pot pies until the puff pastry was nicely browned.

  • 1 lb lean ground beef

Instructions

  1. Preheat oven to 375F.

  3. Add the diced onions to the skillet. Crumble the ground beef well and continue cooking until it is fully browned. Drain any excess grease from the skillet.
  4. Add the chopped garlic. Stir well and continue cooking for about 2 minutes.
  5. Add the can of Rotel and the taco seasoning to the skillet. Stir well and continue cooking until all of the ground beef is well coated in seasoning and no liquid remains in the skillet.
  6. Remove the skillet from the heat and set it aside.
  7. Form the two sheets off puff pastry into one 20 x 13-inch rectangle by joining them together and cutting some of the pastry from the short side of the rectangle and adding it along the long side of the rectangle. Use a rolling pin to roll the dough out to the correct size.
  8. Spray a 6 cup jumbo muffin tin well with cooking spray.
  9. Gently drape the puff pastry over the muffin tin. Then carefully arrange the dough to line all of the cups.
  10. Spoon the ground beef mixture into the pastry lined cups.
  11. Sprinkle the shredded nacho cheese on top of the ground beef.
  12. Place the muffin tin in the oven on a lower rack and bake until the puff pastry is nicely browned. 20 - 25 minutes.
  13. Remove the muffin tin from the oven and allow the pot pies to rest for about 5 minutes.
  14. After 5 minutes cut the pastry between the pot pies to separate them.
  15. Carefully lift the pot pies out of the muffin tin.
  16. Top with your favourite taco toppings.
  17. Serve and enjoy!
