- 1 Pillsbury pizza crust
- 1 cup ketchup
- 1 cup Sweet Baby Ray’s Hickory and Brown Sugar BBQ sauce (or your favourite BBQ sauce)
- 1.5 lbs extra lean ground beef
- 20 Ritz crackers, crushed
- 1 oz onion soup mix
- 2 eggs
- 1 cup crispy fried onions
- 2 cups shredded mozzarella and cheddar cheese blend
- 8 slices frozen Texas toast garlic bread, thawed

Step by Step Instructions for Making Meatloaf Sandwich Casserole
STEP 1:
To make this casserole I started by spraying a 9 x 13 inch glass baking dish well with cooking spray.
I opened a package of Pillsbury pizza crust and unrolled it into the bottom of the dish.
STEP 2:
I poured some ketchup and Sweet Baby Ray’s Hickory and Brown Sugar BBQ sauce into a mixing bowl.
I stirred the ketchup and BBQ sauce together well.
STEP 3:
I dropped some extra lean ground beef into a large mixing bowl.
I added some crushed Ritz crackers, onion soup mix and eggs to the bowl.
STEP 4:
I added ½ cup of the prepared ketchup and BBQ sauce mixture to the bowl.
I used my hands to combine all of the ingredients well.
STEP 5:
I press the ground beef mixture out into an even layer on top of the pizza dough in the baking dish.
I spread the remainder of the ketchup and BBQ sauce mixture over the meat mixture.
STEP 6:
I placed the dish in the oven and baked the casserole for 30 minutes.
STEP 7:
After 30 minutes I removed the dish from the oven.
I sprinkled some crispy fried onions over the meatloaf.
STEP 8:
I sprinkled some shredded mozzarella and cheddar cheese over the crispy fried onions.
Then I placed some slices of store bought Texas toast garlic bread on top.
STEP 9:
I returned the dish to the oven and continued baking the casserole until the cheese was fully melted and the garlic bread was toasted.
I removed the casserole from the oven and allowed it to rest for a few minutes.
Then the meatloaf casserole was ready to slice and serve.

Ingredients
- 1 Pillsbury pizza crust
- 1 cup ketchup
- 1 cup Sweet Baby Ray's Hickory and Brown Sugar BBQ sauce (or your favourite BBQ sauce)
- 1.5 lbs extra lean ground beef

Instructions
- Preheat oven to 350F.
- Spray a 9 x 13 inch baking dish well with cooking spray.
- Unroll the raw pizza crust into the bottom of the dish.
- Pour the ketchup and BBQ sauce into a bowl and stir well. Set aside.
- Drop the ground beef, crushed Ritz crackers, onion soup mix and eggs into a mixing bowl. Add ½ cup of the prepared ketchup and BBQ sauce mixture to the bowl. Combine all of the ingredients well. ( I like to use my hands for this )
- Spread the meat mixture into an even layer on top of the pizza dough in the baking dish.
- Pour the remainder of the ketchup and BBQ sauce mixture over the meatloaf mixture and spread it out evenly.
- Place the dish in the oven and bake the casserole for 30 minutes.
- After 30 minutes, remove the dish from the oven and sprinkle the crispy fried onions on top.
- Sprinkle the shredded cheese over the crispy onions.
- Place the garlic bread slices on top of the cheese.
- Return the baking dish to the oven and bake the casserole until the cheese is fully melted and the garlic bread is toasted. 20 - 25 minutes. ( Use a thermometer to make sure the meatloaf layer has reached at least 165F )
- Allow the casserole to rest for a few minutes after removing it from the oven.
- Slice, serve and enjoy!
