If you thought Thanksgiving leftovers meant sad little sandwiches, let me introduce you to the chaos-gremlin of holiday food: Sheet Pan Thanksgiving Poutine.

We’re talking golden French fries buried under shredded turkey, melty mozzarella, proper cheese curds, dollops of cranberry sauce, stuffing crumbles, and a generous gravy pour that brings it all back to life. It’s loud, it’s unhinged-in-a-good-way, and it’s exactly what your fridge full of leftovers has been begging you to make.
Why This Recipe is a Winner!
- It uses up a ton of leftovers at once – No more juggling tiny containers in the fridge — this clears them out in the most delicious way possible.
- It feeds a crowd fast – Perfect for Black Friday hangouts, game nights, or “everyone is still in my house, help” situations.
- Customizable to whatever’s left – No stuffing? Add more cheese. No turkey? Use ham. This recipe plays well with whatever survived dinner.
- It’s fun and unexpected – turning a Canadian classic into a Thanksgiving mash-up is peak holiday magic.
- Maximum payoff for minimum work – One pan, no fancy techniques, and it tastes like you spent way more time than you did.

This Thanksgiving Poutine is the kind of comforting, over-the-top leftover magic that makes you wish every holiday came with extra turkey.

The whole thing comes together on one sheet pan, making it ideal for lazy long-weekend lunches or feeding a hungry crowd fast.

Step by Step Instructions
STEP 1:
I prepared some French fries according to the package directions. I chose to do them in the air fryer.
Then I poured the cooked French fries onto a baking sheet and spread them out evenly.

STEP 2:
I sprinkled shredded turkey over the fries and then spooned some cranberry sauce over the turkey.

STEP 3:
I sprinkled shredded mozzarella on top followed by some cheese curds.

STEP 4:
I sprinkled crumbled stuffing on top of all of the ingredients on the sheet pan.

STEP 5:
I placed the baking sheet in the oven and cooked the poutine for 15 minutes.
While the poutine was in the oven I heated up the turkey gravy on the stove.

STEP 6:
I removed the poutine from the oven and poured the hot gravy over top.

Then the leftover turkey dinner poutine was ready to scoop and serve!

Each bite is a mix of creamy melted cheese, tender turkey, crisped-up stuffing, and bright pops of cranberry.

If you’re craving something comforting, cheesy, and a little bit chaotic, then you need to try this Sheet Pan Thanksgiving Poutine!
