- Egg Yolks: The yolks add richness and help keep the cookies soft and delicate.
- Vanilla Extract: Adds warm flavor to the cookie base and pairs perfectly with the caramel and chocolate.
- Caramel Bits: These melt down into a sweet, gooey caramel filling for the center of each cookie.

Erin's Tips for the Best Twix Cookies
- Chill the dough before baking: This helps the cookies hold their shape and keeps the indent from spreading too much in the oven.
- Make deep enough indents: Press the center down firmly with the back of a measuring spoon so there’s room for the caramel after baking.
- Soften the butter, don’t melt it: Softened butter gives the dough the right texture, while melted butter can make the cookies spread.
- Let the cookies cool before adding caramel: If the cookies are too warm, the caramel can run instead of sitting nicely in the center.
- Stir the caramel often: Microwave the caramel in short bursts and stir well so it melts smoothly without scorching.
- Use a piping bag for the chocolate: It gives you a neater drizzle and makes the cookies look bakery-worthy with very little effort.
- Let them set before stacking: Chill the finished cookies until the caramel and chocolate are firm so they don’t smear together.
Substitutions and Variations
- Use semi-sweet chocolate: Swap the milk chocolate chips for semi-sweet chocolate chips if you want the cookies a little less sweet.
- Try dark chocolate: Dark chocolate gives the cookies a richer flavor and balances the sweet caramel filling nicely.
- Add sea salt: Sprinkle a tiny pinch of flaky sea salt over the caramel before adding the chocolate drizzle for a salted caramel Twix cookie vibe.
- Use caramel sauce: If you do not have caramel bits, you can use a thick caramel sauce, but make sure it is sturdy enough to sit in the cookie indent.
- Try chocolate melting wafers: Chocolate melting wafers work well for a smooth drizzle and set up nicely once chilled.
- Make them extra chocolatey: Dip the bottom of each cooled cookie in melted chocolate before filling the centers.
- Add chopped candy bars: Sprinkle finely chopped Twix pieces over the chocolate drizzle before it sets for even more candy bar flavor.
- Use vanilla bean paste: Swap the vanilla extract for vanilla bean paste for a stronger vanilla flavor in the buttery cookie base.
Frequently Asked Questions
Can I make these Twix Cookies ahead of time?
- Yes, these cookies are great for making ahead. Once the caramel and chocolate are set, store them in an airtight container until you’re ready to serve.
Do I have to chill the cookie dough?
- Yes, chilling the dough helps the cookies hold their shape and keeps the indents from spreading too much while baking.
Can I use caramel sauce instead of caramel bits?
- You can use a thick caramel sauce, but caramel bits melted with heavy cream will give you a sturdier filling that sets better in the center of the cookies.
How do I keep the caramel from running off the cookies?
- Make sure the cookies are fully cooled before adding the caramel, and do not overfill the indents. Chilling the cookies after filling also helps the caramel set.
How should I store Twix Cookies?

Can I freeze these cookies?
- Yes, you can freeze them in a single layer until firm, then transfer them to a freezer-safe container. Thaw them in the refrigerator before serving.
