  • Biscoff cookie crumbs: These make up the base of the truffle filling and give the treats their signature sweet, spiced cookie flavor. You will need extra crumbs for sprinkling over the tops of the truffles before they set.
  • Cream cheese: Use room temperature cream cheese so it blends smoothly with the cookie crumbs and cookie butter. It helps bind the filling together and gives the truffles a rich, creamy texture.
  • Biscoff cookie butter: This adds even more cookie butter flavor and helps create a soft, decadent truffle center. Make sure it is well mixed into the filling so every bite has that sweet Biscoff taste.
  • Almond bark: Melted almond bark creates the smooth outer coating for the truffles. It sets up nicely in the fridge and gives each truffle a pretty, candy-coated finish.

Erin's Tips for the Best Biscoff Truffles

  • Use room temperature cream cheese: Softened cream cheese mixes much more easily with the cookie crumbs and cookie butter, giving you a smoother truffle filling.
  • Crush the cookies finely: Fine crumbs help the truffle mixture hold together better and create a smoother bite.
  • Chill before dipping: Don’t skip the first chill time. Cold truffles are much easier to dip and are less likely to fall apart in the melted almond bark.
  • Work in batches: Keep some of the truffles in the fridge while you dip the others so they stay firm.
  • Tap off the excess coating: Let the extra almond bark drip off before placing the truffles back on the parchment so the coating doesn’t pool too much at the bottom.
  • Add the crumb topping right away: Sprinkle the extra Biscoff crumbs on top while the almond bark is still wet so they stick properly.
  • Use parchment paper: It keeps the truffles from sticking and makes cleanup much easier.
  • Give them time to set: Let the coated truffles chill until the almond bark is firm before serving or storing.
  • Use white chocolate instead of almond bark: White chocolate melting wafers or white candy melts can be used in place of almond bark for the coating.
  • Try chocolate almond bark: For a chocolate-cookie butter combo, dip the truffles in chocolate almond bark instead of vanilla almond bark.
  • Add a drizzle: Once the coating is set, drizzle the truffles with melted cookie butter, white chocolate, or chocolate for a pretty finish.
  • Change the topping: Instead of extra Biscoff crumbs, top the truffles with sprinkles, crushed toffee bits, chopped nuts, or a little flaky sea salt.
  • Make them extra Biscoff-y: Add a small spoonful of extra cookie butter to the filling if you want a stronger cookie butter flavor.
  • Use a different cookie: Golden Oreos, gingersnaps, graham crackers, or shortbread cookies can be used for a similar no bake truffle base.
  • Add holiday colour: Use festive sprinkles on top to make them fit Christmas trays, Valentine’s Day boxes, or party dessert platters.
  • Make smaller bites: Roll the mixture into smaller truffles for mini bite-sized treats that are great for cookie boxes and dessert boards.

How should I store Biscoff truffles?

  • Store the truffles in an airtight container in the refrigerator. They are best kept chilled because of the cream cheese filling.

Can I make these truffles ahead of time?

  • Yes, these are a great make-ahead dessert. You can prepare them a day or two in advance and keep them refrigerated until you are ready to serve.

Can I freeze Biscoff truffles?

  • Yes, you can freeze them in a freezer-safe container for up to 2 months. Thaw them in the refrigerator before serving.

How do I crush the Biscoff cookies?

  • You can pulse them in a food processor until fine, or place them in a zip-top bag and crush them with a rolling pin.
