Erin's Tips for the Best Cajun Chicken Alfredo Soup
- Use Fully Cooked Bacon: I used Kirkland fully cooked bacon to save time, but regular bacon works just as well. Cook it until crispy for the best texture.
- Adjust the Cajun Seasoning: Cajun seasoning blends vary in saltiness and heat, so start with a little less if you're sensitive to spice and add more to taste.
- Scrape the Bottom of the Pot: When adding the chicken broth, scrape up all those browned bits left behind by the bacon and chicken. They're packed with flavour!
- Cook the Flour Thoroughly: Let the flour cook with the butter and garlic for a few minutes to eliminate any raw flour taste.
- Keep the Soup at a Gentle Simmer: Once the pasta is added, reduce the heat and stir occasionally to prevent the noodles from sticking to the bottom.
- Watch Your Pasta: Cooking times will vary depending on the type of noodles you use. Check for doneness rather than relying strictly on the timer.
- Shred Your Own Cheese: Freshly shredded parmesan and mozzarella melt more smoothly into the broth than pre-shredded varieties.
- Add the Cheese Off the Heat: Remove the pot from the burner before stirring in the cheeses to help prevent the broth from becoming grainy.
- Save Some Bacon for Garnish: Reserve a couple of tablespoons of crispy bacon to sprinkle over individual bowls just before serving.
- Adjust the Consistency: The pasta will absorb liquid as the soup sits. Stir in a splash of chicken broth or half and half if it becomes too thick.
- Best Served Fresh: This soup is creamiest right after cooking. Leftovers can be reheated gently over low heat with a splash of extra liquid to loosen the broth.
Substitutions and Variations
- Switch Up the Pasta: Swap the Fettuccine Ricce for penne, rotini, bowtie pasta, egg noodles, or broken lasagna noodles. Adjust the cooking time as needed.
- Use Chicken Thighs: Boneless, skinless chicken thighs are a great alternative to chicken breasts and add extra flavour and tenderness.
- Try Rotisserie Chicken: Save time by using shredded rotisserie chicken instead of cooking raw chicken. Stir it into the soup near the end to heat through.
- Make It Extra Spicy: Add cayenne pepper, crushed red pepper flakes, or a few dashes of hot sauce for an extra kick.
- Keep It Mild: Reduce the Cajun seasoning and use a mild Cajun spice blend for a more kid-friendly version.
- Add Some Sausage: Stir in sliced and browned smoked sausage or andouille sausage for an extra hearty Cajun-inspired soup.
- Swap the Bacon: Use turkey bacon or omit the bacon entirely if you prefer.
- Add Some Veggies: Stir in diced bell peppers, onions, mushrooms, or spinach for extra flavour, colour, and texture.
- Make It Extra Cheesy: Add more parmesan or mozzarella, or stir in some shredded Monterey Jack for an even richer, cheesier broth.
- Lighten It Up: Swap some of the half and half for whole milk for a lighter broth. The soup won't be quite as rich and creamy.
- Try Different Proteins: Replace the chicken with cooked shrimp for a delicious Cajun Shrimp Alfredo Soup. Add the shrimp near the end to avoid overcooking.
- Add a Tomato Twist: Stir in a can of drained diced tomatoes or Rotel for a tangy, slightly spicy variation.
Frequently Asked Questions
Is Cajun Chicken Alfredo Soup spicy?
- This soup has a mild to moderate kick from the Cajun seasoning, but the creamy Alfredo broth helps balance the heat. You can reduce the Cajun seasoning for a milder soup or add cayenne pepper or hot sauce if you like things extra spicy.
Can I make this soup ahead of time?
- Yes, but this soup is best enjoyed fresh because the pasta continues to absorb the creamy broth as it sits. If you're preparing it ahead of time, consider cooking the pasta separately and adding it just before serving.
How do I store leftover Cajun Chicken Alfredo Soup?
- Allow the soup to cool slightly before transferring it to an airtight container. Store it in the refrigerator for up to 3–4 days.
Can I freeze Cajun Chicken Alfredo Soup?
- Freezing isn't recommended because the creamy broth can separate when thawed, and the pasta may become mushy. For the best flavour and texture, enjoy this soup fresh or refrigerate leftovers.
