These Chicken and Bacon Ritz Crackers Nachos are an awesome snack or easy lunch. This recipe is a great way to use up leftover chicken.

Ritz crackers are one of my favourite snacks and I love turning them into a meal. This recipe for Ritz cracker nachos is the perfect meal for one or great for sharing as a snack. You can throw this dish together on just a few minutes.

 

I started by placing the crackers in a single layer on an oven safe plate and topping them with leftover shredded chicken. You could use a baking sheet instead of a plate. I just found it easier to cook the nachos right on the dish I planned on serving them on.

I sprinkled the nachos with grated cheese, real bacon bits and chopped banana peppers before putting them in the oven. You could also use jalapeño peppers. I just used banana peppers because I love them with everything and always have some on hand.

Once the cheese was perfectly melted I removed them from the oven and drizzled them with sweet hot mustard and ranch dressing before serving.

I love the taste of the sweet hot mustard with the chicken and Ritz crackers but you could always use salsa instead if you are looking for more of a traditional nacho taste.

 

These Ritz cracker nachos are spicy with just the right hint of sweet.

Ingredients

  • 16 Ritz crackers
  • 1/3 cup chicken, cooked, shredded
  • 1/2 cup marble cheese, grated
  • 1 tbsp real bacon bits
  • 1 tbsp banana peppers, diced
  • 1 tbsp sweet hot mustard
  • 1 tbsp ranch dressing

Instructions

  1. Preheat oven to 450F.
  2. Place Ritz crackers in a single layer on an oven safe plate.
  3. Top crackers with shredded chicken and cheese.
  4. Sprinkle with diced peppers and bacon bits.
  5. Cook for about 5 minutes until cheese is completely melted.
  6. Remove from oven and drizzle with mustard and ranch dressing.
  7. Serve and enjoy!
