STEP 1:
To make this cheesecake, I started by dropping a brick of softened cream cheese into a mixing bowl.
I added some brown sugar, granulated sugar, cinnamon and vanilla extract to the bowl.

I used an electric mixer to cream the ingredients together until smooth.
STEP 3:
I added some Cool Whip to the bowl and used a rubber spatula to fold the Cool Whip into the cream cheese mixture until fully combined.
STEP 4:
I opened up a store bought graham pie crust that I had placed in the freezer for about 30 minutes so that it would be less fragile to work with.
I scooped the cream cheese mixture into the pie crust and spread it out evenly.
STEP 5:
I placed 8 store bought mini cinnamon rolls in a circle close to the crust and pressed them down into the cheesecake.
I pressed one mini cinnamon roll down in the center of the cheesecake.
I covered the cheesecake and placed it in the refrigerator to chill for 3 hours.
STEP 6:
After 3 hours I removed the cheesecake from the refrigerator.
Then the cinnamon cheesecake was ready to slice and serve.
I used a piping bag to drizzle some cream cheese frosting over each slice when serving to get that true cinnamon roll taste!
